Objective] To study a method for quantitative determination of sucralose in food. [Methods] High performance liquid chromatography was used for quantitative determination of sucralose in foods. [Results] Sample pro-treatment procedures included sucralose extraction, enrichment and purification . A high performance liquid chromatography gradient method with an evaporative light-scattering detector has been developed for the determination of sucralose. The average recovery rate was 94.3% and the relative standard deviation was 2.40%. [Conclusion] This method can meet the analysis requirement for determination of sucralose in food and it is a simple, reliable method easy for popularizing.
