Antioxidation of superoxide dismutase and its application in food industry

Superoxide Dismutase(SOD)is one of metal enzymes widely existed in organisms.SOD catalyzes the dismutation reaction of O2-in order to eliminate the effect of O2-,which is transformed into hydrogen peroxide and oxygen.SOD has a particular effect on resisting to radiation,aging and antitumor.It plays an important role on food industry,especially on functional food.In this paper,the SOD's physicochemical properties,antioxidation and the application in food industry are reviewed.
