Distribution of Nitrate in Vegetable Samples and Its Influencial Factors

The Levels and distribution of nitrate in vegetable samples were studied.The relationship among nitrate to chloride and different metals was involved.It was shown that nitrate concentrations were significant different in different vegetables,and it accumulated mainly in root vegetables,leaf vegetables,next in legumes,scallions and in gourds,lowest in egg plants and yam.The levels of nitrate in various vegetable tissue were found different,i.e. rootsstemspetiolesleaves.Except for leaf vegetable,accumulation of nitrate and chloride has almost adversary relationship.There was significant negative correlation between nitrate levels and zinc levels in vegetables,and significant positive correlation between nitrate levels and cadmium levels.
