This chapter focuses on the pre-harvest UV-B radiation effects on selected secondary plant metabolites in edible plants, such as phenolic compounds, carotenoids, abscisic acid and other terpenoids, glucosinolate breakdown products, sulfides, alkaloids and betalains.
