Extraction of luffa seed protein

The alkali extraction and acid precipitation of protein from luffa seed were studied,and the amino acid composition of luffa seed protein was determined.The results showed that using single factor experiment and orthogonal experiment the optimal extraction conditions were obtained as follows:alkali extraction pH 10,extraction time 40 min,extraction temperature 45 ℃,ratio of solid to liquid 1∶15,acid precipitation pH 4.2.Under these conditions,the extraction rate of luffa seed protein was 21.65% and the purity was 82.48%(wet basis).The amino acid composition analysis showed that the content of essential amino acid of luffa seed protein was closed to soybean protein,better than peanut protein.
