The content of Ryegrass leaf protein concentration hydrolysed by trypsin was measured by FormalinTitration.Single factor and L_9(3~4) orthogonal optimized the hydrolysis condition.Main components of hydrolysate was analysed under the optimum conditions and their relative molecular weights were determined by HPLC.The results indicated that the optimum hydrolysis condition was 38 ℃,pH 8.0,and the proportions of(E/S)0.06 μg/mL and 7 hours for hydrolysis of ryegrass leaf protein with trypsin.There are eight components in the hydrolysate,their relative molecular weights ranges from 29 to 9493.
