Research Progress in Pectinase

Pectinase is a heterogeneous group of related enzymes that hydrolyze the pectic substances. It is widely distributed in higher plants and microorganisms. Extensive study of some pectinase such as protopectinases, polygalacturonases, lyases and pectin esterases has been done up to the present. Pectinase plays important roles in the field of bioengineering. In this paper, the classification, structure, detection and physiochemical properties, and biological properties of pectinase were illustrated.
