Marine algal polysaccharides (MAPs) or phycocolloids are derived from marine macroalgae or seaweeds. They are the commercially important biopolymers and polyelectrolytes with their uniqueness in properties like rheology, water retention, gel formation, etc. MAPs are a potential source of pharmaceuticals, and health and research products containing different bioactive compounds. They have varying molecular weights, chemical constitution and properties. MAPs are the supplementary constituents of the respective algae of source. They are used as a gelling agents and stabilizers in the food industry, biochemical and biotechnological applications in the microbiological culture medium, dental impression materials, laxative preparations, etc. MAPs are extensively used in biotechnological tools of electrophoresis, gel chromatography, immobilization of enzymes and cells. Chemical modification of MAPs is done to produce extensive products of desired properties. Two types of functional groups, i.e. hydroxyl andcarboxyl groups present in MAPs, can be modified to alter the characteristics in comparison to the parent compounds.
