The water extract content of green and fermented Pu-erh tea samples under different brewing conditions of brewing time and water temperature was determined and the relationship between extraction regulation of water extract and brewing condition was analyzed to provide reference for Pu-erh tea consumption.The results showed that the extraction amount and speed of water extract increased with the increase of water temperature and brewing time,the water extract content in the first brewing Pu-erh tea was the highest and the water extract content in Pu-erh tea reduced with the increase of brewing frequency.
