Synthesis and characterization of three major alliin in garlic

Three major alliin in garlic which are S-methyl-L-cysteine sulfoxide,S-propyl-L-cysteine sulfoxide and S-allyl-L-cysteine sulfoxide,were synthesized with L-cysteine hydrochloride.The purity of the three synthetic compounds were identification by HPLC,MS and 1H NMR methods.The results showed that the purity of the three compounds was up to 99.99%,and were obtained in yields of 46.5%,34.6%,46.2%,respectively.
