Processing technology of cloudy pomegranate juice beverage

Through juicing, color-protecting, mixing, homogenization, sterilization and other processes, cloudy pomegranate juice beverage is made of pomegranate. Through single factor test and orthogonal experiment, the optimal parameters is got:30 MPa of homogenizing pressure, 15 min of sterilization time, 0.6% citric acid added into pomegranate juice, 4% sugar, 4% fructose syrup, 0.12% Xanthan gum and 0.12% sodium carboxymethyl cellulose added into beverage during the process of mixing. Cloudy pomegranate juice beverage is of high nutritional value, good color and flavor.
