Study on determination method of anthocyanin of black rice

The optimum conditions for determination of anthocyanin of black rice were studied by using 5 kinds of black rice. The result indicated that in the lipid-removed black rice more than 95% of the pigment could be extracted in HCl/EtOH (15/85) at 80℃ for 60min in twice. The extract could be measured for the pigment content by ABS ralue under the wavelength of 535nm.
