ANALYSIS OF PROTEIN,AMINO ACIDS AND SOME ELEMENTS IN MANTELLUM OF FOUR KINDS OF FRESHWATER MUSSEL

The crude protein contents in mantellum of four kinds of freshwater mussel were determined and the amino acids(AA)were analyzed.Atomic absorption and plasma absorption spectroscopy were used to determine the contents of 12 metal elements in the freshwater mussels.The results showed that the protein contents in dried mussel are 41.34% for Hyriposis cumingii Hea,22.03% for Anodonta woodiana pacifica Heude, 32.14% for Cristaria plicata Leach,and 7.78% for Law protula Leai.All of the four mussels contain 17 kinds of AA.Among the 12 analyzed elements in the freshwater mussels,the contents of Cu are the highest,the contents of Fe,Mn,Mg,Ca,Zn and Cr are less than those of Cu,whereas the contents of Ni,Co,Pb,and Hg are the least.These results showed that the mantellum of all the four testing mussels are good protein resources.
