Factors influencing the gelatin of low methoxyl pectin

Factors mainly influencing the gelatin of low methoxyl pectin are low methoxyl pectin concentration,soluble solid proportion,calcium amount,and pH of gel.This paper made a study on the factors influencing the gelatin to find out the optimal conditions of gelatin forming by texture analysis combined with sensory evaluation.
