摘要
The frequent occurrence of food safety incidents has aroused widespread public concern all over the world. The detection of trace hazards in food is an important means to ensure public safety. The results of single-signal sensing assays are susceptible to complex sample matrix, environment and operating conditions to obtain inaccurate test results. In recent years, dual-signal mode sensing assays are designed to offset the inherent limitations of each sensing mode and integrate their unique benefits to circumvent false positive results arising from biological environment, sample matrix, and other factors, thereby enhancing the reliability of the test results. Dual-signal mode sensing detection can effectively detect hazardous substances at trace level with improved accuracy, which is of great significance in the fields of food safety. This article comprehensively reviews the working principle of dual-signal mode sensing technology, focuses on the diverse types of dual-signal mode sensing methods in recent years, and summarizes the application of dual-signal mode sensing technology in food safety. The possible challenges and development prospects of this technology are discussed. The aim of this article is to comprehensively summarize the research progress of dual-signal mode sensors with a view to promoting the development of related fields.
