Tetracycline comprises a group of antibiotics that are used in animals with therapeutic and prophylactic purpose. Among the most commonly used are oxytetracycline (OTC), tetracycline (TTC) and chlortetracycline (CTC). There is a concern of the possible presence residues of these antibiotics in food for human consumption such as muscle of beef, pigs and sheep, meat of poultry, milk and honey. A study was made of the content of Tetracycline (OTC, TTC and CTC) in the pork muscle sold in markets in Caracas and Miranda State. The AOAC method was used. The study validated the AOAC standard method by reverse phase liquid chromatography, UV detection. Taking into account the parameters set by the Organization of the United Nations Food and Agriculture (FAO), three columns were tested (Nova-Pack C18, Spherisorb C8 and Sun Fire C18). The limits of detection and quantification were found adequate to detect the maximum amounts of antibiotics accepted in these samples of 200 ng / g.
