Study on antioxidative activity of two lactic acid bacteria.

The intact cells,cell-free extract and inactive cells of the Lactobacillus plantarum and Lactobacillus bulgaricus's antioxidative capacity were studied.The scavenging capacity of DPPH,hydroxyl radical,and superoxide anion,inhibition of lipid peroxidation,the reducing activity and chelation capacity of metal ions were examined,and the difference between the two Lactobacillus was compared.The results showed that Lactobacillus plantarum's antioxidative capacity was higher than Lactobacillus bulgaricus',which provided the foundation of comprehensive utilization for the Lactobacillus plantarum.
