Study on the Degradation of the Pectin in Cane Juice

The effects of pectinase dosage,pH value and reaction time on the degradation of pectin in cane juice were investigated in this paper.The experiment results showed that the degradation ratio of pectin was in proportion to pectinase dosage under given pectinase dosage range,low pH value was favorable for the degradation of pectin,and more more pectin degraded with reaction time going.
