Legumes, such as soybeans, have become a plant-based alternative to reduce the consumption of animal-derived foods, especially in vegetarian or vegan diets. However, since some plant-based foods are questioned for their lower nutritional profile compared to their animal-based counterparts, this study was conducted to determine the content of essential trace elements (Cu, Fe, Mn, Mo, Zn) in 90 samples of different legumes ( Glycine max, Vigna radiata, Vigna angularis, Vigna mungo ) by ICP-OES. The recorded data demonstrate that the content of zinc, iron, and manganese is remarkable (24.60, 44.40 and 11.20 mg/kg ww respectively for G. max ). Calculate their contribution percentages shows that soybeans can provide a significant amount of these trace elements to the diet, with molybdenum being particularly notable for its very high contribution percentage (207 % for V. radiata ). The highest concentration of all trace elements is found in Italian soybeans. It is necessary to consider that even when determining the composition of these trace elements in soybeans, utilization may not be complete in some cases because the bioavailability of these elements can be affected by compounds such as phytates. • Legumes, especially soy, are an important food in the human diet. • Determination of some microelements have been determined (Cu, Fe, Mn, Mo, Zn). • Significant differences have been observed between the different species. • The highest concentration of trace elements is found in Italian soybeans. • Trace element profile is adequate for adult, but bioavailability studies are needed.
