Research Progress of Pullulan

Pullulan,a kind of exopolysaccharides produced by Aureobasidium pullulans,has a number of favorable properties such as nontoxicity,low viscosity,high plasticity,good film-forming and so on.First of all,the structure and characteristic of Pullulan are briefed.Then the biosynthesis method and fermentative production method for Pullulan are reviewed in detail.Finally,the wide applications of Pullulan in the fields of food industry,pharmaceutical industry,cosmetic industry and wastewater treatment are narrated.
