Research Advances of Green Tea on the Extraction of Functional Ingredients and Health Function

China is a large green tea producer in the world,the proportion of China's green tea output in the world's total is about 65 percent. Green tea is loaded with many kinds of materials such as the green tea polyphenols、the theine、the amino acid、the tea polysaccharide、the Vitamin and the aromatic substance. This article mainly elaborated the recent research advances on the extraction process and health effects of green tea's functional ingredient including the green tea polyphenols、the theine、the amino acid and the tea polysaccharide.
