The progress of enzymatic synthesis of sucrose esters in nonaqueous phase was reviewed in detail. The effect of reaction parameters such as enzyme species, solvent system used as reaction medium, substrate properties as well as additional auxiliary means on the yield of sucrose ester and regioselectivity of the enzyme was described mainly. The multi hydroxyl groups of sucrose and the immiscibility with the acyl group donor are the major difficulties in the synthesis process.Through various ways, such as design of solvent system used as reaction medium;modification and denature of substrate;and coupling with external auxiliary physical fields such as microwave irradiation and ultrasonic wave et al to improve the missibility of the substrate;incorporating with screening of enzymes and modification of the sucrose, highly regioselective sucrose ester can be obtained. The existing problems in the field of enzymatic synthesis of sucrose ester as well as its future perspectives were pointed out.
