Measurement of the dielectric properties of soft materials with high loss and high permittivity in a parallel-plate region

A method described is for measurement of the loss tangent and permittivity of any soft substance in which either or both of these quantities have large values, by means of field measurements in a parallel-plate region. A measurement of the complex permittivity of agar agar is included. The method has proved to be accurate and convenient.
