Research Progress in Antioxidant Property and Antioxidant Mechanism of Curcumin

The chemical compositions of curcumin were summarized,the research progresses in the bioactivities of curcumin such as scavenging free radical and strengthening the activity of antioxidant enzymes,as well as its antioxidant mechanism were expounded.The developmental prospects of curcumin-antioxidant products were discussed.
