摘要
Solvents are widely used in food industry, specially for extraction processes and they represent about 2% of world consumption. Most of them are organic solvents obtained from petrochemical industry. Organic solvents are highly flammable and some of them show recognized toxicity as carcinogenic reproductive hazards or neurotoxins. Green chemistry pursues their substitution for environmental friendly solvents in order to provide safer procedures in industry and laboratories, healthier workspaces and efficient and non toxic materials for consumers. Food industry is not stranger to this trend.
