Preparation of wheat resistant starch

Wheat resistant starch was prepared by autoclaved at 121℃.An orthogonal trial was conducted and the optimal parameters for preparation of wheat resistant starch were investigated.Based on the best process condition of autoclaving method,the thermostable α-amylase and pullulanase were used on the preparation of resistant starch.It was found that through enzymatic treatment the productivity of resistant starch was considerably raised.
