Microorganism pectinase include protopectinase,polygalacturonase,catenase and pectinic acid.Each of them serves different functions,such as pectinase can be used to dissolve plant cell wall and the pectic substance in the in- terstitial cells.It can also be applied in the production of pectic oligosacharide.
