Detection and control of citrinin in Monascus and its strategy of industrial production

The functional active substances which are produced by monascus has been used widely and studied deeply.However,most kinds of Monascus sp.can produce citrinin which will negatively affect its safety and export.Controlling the level of citrinin in monascus is an urgent task.In this paper,the current progress of detection methods and measures to control citrinin in the production of monascus were introduced.In addition,the strategy of industrial production of monascus without citrinin was discussed.
