Influence of PH on the Color of Monascus Pigment

PH influences the color of Monascus pigment.Inside certain pH,the greatest absorption wavelength and color of Monascus pigment are relatively small effect.But in a very sour or very alkaline conditions,the color of Monascus pigment will change.We have discussed that the greatest absorption wavelength and the content of yellow and red of Monascus pigment changes with pH through experiments.Consequently it could be find that the law of Monascus pigment's color changes with pH.
