Status and application prospects of selenium-enriched Lentinula edodes

Lentinula edodes has a very high value in edible and medicine utilization. Selenium is extremely important to human health. Research of selenium-enriched Lentinula edodes has broad application prospects. In this paper,research progress in several aspects of selenium-enriched Lentinula edodes is expounded such as metabolism of selenium in Lentinula edodes,selenium accumulation process and ability of Lentinula edodes,breeding and cultural techniques of selenium-enriched Lentinula edodes,and development of downstream product. Besides,the problems in research,future development and application prospect in seleniumenriched Lentinula edodes is also discussed.
