Research and development on resistant starch prepared by new technology

This review highlights the recent development in the resistant starch at home and abroad. New technology applied in the preparation of resistant starch is introduced,including microwave, ultrasonic and ultra–high pressure etc. The classified method of resistant starch and applications in the food industry are also briefly introduced in this study.
