Food authentication is essential to guarantee the quality and safety of food products. Colorimetric sensor arrays have become a promising tool for quick and affordable food authentication. Based on their distinct colorimetric responses, these arrays can detect and identify a variety of chemical compounds in food samples. In this chapter, we examine recent developments in the use of colorimetric sensor arrays for food authentication. The development of colorimetric sensor arrays and their use in identifying food authentication, fraud, and adulteration have been explored. Furthermore, the use of chemometrics for authentication has been addressed. Overall, the progress of colorimetric sensor arrays has the potential to completely transform the field of food authentication by offering a quick and precise method to ensure the safety and caliber of food products.
