The effects of high-temperature on peroxidase activity of sweet potato root tuber was investigated in the present study.The results indicated that exposed to high-temperature treatment,the peroxidase(POD) activity of Shangshu 19,Xushu 23,Sushu 8 decreased rapidly by 0.37~0.92 in comparison with the control.However,average POD activity was much lower and stable than that of stress-free in the storage from12th to 92th day,followed by sharp increase for both stress and stress-free,and the peak was scored from 112th to 132nd day.Mean POD activity of high-temperature was much higher than that of the control.Health rate of root tuber was higher in high-temperature treatment,reaching 94.7%.Therefore,POD activity in the storage of 0~92nd day could be used as a indicator of sweet potato storability evaluation.
