Milk obtained from yaks can possess potent bioactive properties, which can be ascribed to the presence of various bioactive peptides and specific lactic acid bacteria and their metabolites present in the milk. These bioactive components can suppress diseases like cancer, stroke, hypertension, etc. The isolated peptides and beneficial bacteria in milk can alleviate lifestyle diseases. Therefore, in this chapter the various bioactive properties of yak milk and the methodology involved in production of bioactive peptides are discussed in detail.
