Application of mixed fermentation agent in chicken processing

The fresh chicken was taken as raw material in this research.Oxygen and acid resistant mutation of bifidobacterium,lactobacillus plantarum,staphylococcus xylosus,and lactococcus lactis were selected as mixed fermentation starter.Through the single factor experiment and orthogonal test,the effect of fermentation time,fermentation temperature,inoculating proportion,and inoculation amount on the fermentation condition of chicken was studied.The optimum fermentation condition was 2∶1∶2∶1 of lactobacillus plantarum,lactococcus lactis,staphylococcus xylosus,and bifidobacterium,fermented at 30℃ for 16h,and the inoculation amount was 2×107cfu/g.
