Mixtures of two biopolymers in aqueous solution can be designed such that they adopt a de-mixed two-phase state with ‘emulsion’ character. However, the two emulsion phases are typically not pure solutions of one of the two biopolymer components. The morphology of this ‘water-in-water emulsions’, like for bioplymer mixtures in general, is strongly dependent on the macromolecular characteristics of the biopolymer components and their concentrations, the physio-chemical state of the solvent, as well as the temperature (and pressure).
