Research on antioxidative capacity of whey protein-derived peptides

The research on milk protein-derived peptides and antioxidative way of whey protein-derived peptides were summarized.whey protein-derived peptides could be used as antioxidants,which could scavenge free radical,chelate metal ion,reduce hydrogen peroxide,and change food physical property.The relationship between variety of amino acid,the structure of peptide and antioxidative activity was discussed.Amino acids with the capacity of hydrogen donating were easy to oxidize,which was one of the antioxidative mechanism of peptides.Spatial structure also had the effect on the antioxidative capacity of peptides.Because of the different determination methods and indice,conflictive results could be obtained.Whey protein-derived peptides possessed superiority,compared with other peptides,and have widespread market prospect.
