The extraction process of crude polysaccharide (COCAP) from Ornithogalum Caudatum Ait and the anti-oxidation activity in vitro of the crude polysaccharide were studied in this paper.The effects of four factors including ratio of water to raw material,extraction temperature,extraction number and extraction time were researched by single factor tests.The optimal extraction process obtained by an orthogonal experiment ((L9(3)4) are as follows:20 mL·g-1,90℃,4times and 3h,respectively.The antioxidant activities were evaluated by 1,1-diphenyl-2-picrylhydrazyl radical (DPPH·),superoxide radical (O2-),hydroxyl radical (·OH) scavenging assay in vitro.The results indicate that COCAP had significantly higher antioxidant activities.COCAP might explore as a natural antioxidant agent for use in medicine or functional foods.
