[Objective] To study the best extraction process and stability of red pigment from jujube peel,so as to provide basis for the development and utilization of the pigment.[Method] The jujube was extracted with NaOH,and the extraction process was optimized by orthogonal experiment, the stability of pigment was observed under different pH,temperature and when added with antioxidant and reducing agent.[Result] As concluded from the orthogonal experiment, the influential order of each factor on the extraction of pigment was extractant concentration extraction temperature solid-liquid ratio;the best extraction conditions were 0.2 mol/L NaOH concentration,80 ℃ of temperature,3 h of extraction time and 1∶ 15(g/ml) solid-liquid ratio. The stability test showed that the pigment was stable except under acid conditions.[Conclusion] It is simple to extract the pigment with NaOH,the extracted pigment is stable and can be popularized.
