RESEARCHES ON FERMENTED MILK DRINK,KEFIR

Kefir is a fermented milk drink that originated in the Caucasus region.This paper introduced the history and present situation of Kefir,especially micro-organisms in Kefir grains.Nutritional values,diet therapeutic and healthy function of Kefir were also reviewed.At last,we particularly summarized the current product development advances of Kefir.
