To investigate high yield and the best quality of gelatin, pig skin was acidified by soaking in 5 percent HCl, H2SO4 and H3PO4 for 24 and 48 h., respectively. Extraction was done at 60 deg C and 80 deg C for 9 and 18 h and filtered out the non-extractable substances. The filtrate was evaporated and dried by drum dryer and vacuum dryer. The gelatin thus obtained was tested for gel strength. The results showed that gelatin yield obtained from pig skin acidified by HCl and H3PO4 for 24 and 48 hrs were significantly different as compared with that acidified by H2SO4 and different extraction time varied the gelatin quality. Extraction at 80 deg C showed poor quality of gelatin whereas extraction at 60 deg C obtained the marketable quality. Drying method also effected the quality of gelatin and vaccum drying was found to be better than drum drying.
