Research Process in Enzymatic Synthesis of Sucrose Ester

Sucrose ester is an important food additive that is synthesized from sucrose and fatty acid derivative.As compared with conventional chemical catalysis,enzyme catalysis can be performed under milder and simpler process conditions,and it has higher selectivity.In this paper,research process in enzymatic synthesis of sucrose ester was summarized.
