Some properties of the sago starch granules were studied,including chemical compositions,granule microphotograph,granule diameter and X-ray differaction pattern,compared with cassava starch and potato starches. The results showd that the protein content of the sago starch was 0.21% and the amylose content was 28%; the shape of the sago starch granule was ellipsoid,and the surface was smooth. The radius of the granule was 27.3 μm in the water,smaller than that of patato starch and cassava starch. X-ray diffraction pattern showed sago starch had C-type crystallinity and its degree of crystallinity was 25%.
