Research on Autolysis Conditions of Beer Waste Yeast

Autolysis conditions of beer waste yeast include autolysis time, autolysis promoter, pH value, use level of water for autolysis and autolysis temperature etc. Test results indicated the following optimal conditions for autolysis: autolysis time:48 h; promoter:3 % salt; pH value: 7; use level of water: 250 %; temperature: 50 ℃; and addition of 0.03 % papain could promote yeast autolysis and shorten autolysis time to 24 h.(Tran.by YUE Yang)
