摘要
The inuential role of the food industry on the diet and lifestyle of the population is linked with the challenge of meeting demand for more desirable, tastier, and visually attractive food products, which also contribute to consumer health. These foods are known as functional products, since they result in proven health benets beyond commonly known nutritional effects (Saad et al., 2011b; Vo and Kim, 2013).
