The qualities of fruits and vegetables greatly impact shelf life, consumers’ choices, and market value. This chapter provides an in-depth review of the major variables and techniques applied in fresh produce quality assessment. There is an attachment to the internal elements of the produce in terms of texture, color, flavor, and nutritional value. An additional concern is that external elements like appearance and packaging affect it. It will go deeply into more complex analytical approaches, from traditional sensory evaluation and physicochemical methods to the frontiers of modernity applied in spectroscopy, nondestructive imaging, and machine learning apps for quality prediction. Among the discussions are the impacts of handling after harvest, storage conditions, and environmental factors on the degradation of quality, as well as new advances in bioactive compounds and their potential ability to improve the quality of fruits and vegetables.
